- Pat chicken dry, season with salt, pepper, paprika, garlic powder, and onion powder. Sear in a hot oiled skillet 4 minutes per side.
- Whisk ketchup, ¼ cup vinegar, brown sugar, Worcestershire, and mustard. Add a splash of water to the skillet to deglaze, then pour into the sauce.
- Place chicken in a slow cooker, cover with sauce, and cook on low for 4 to 5 hours until fork-tender.
- Transfer chicken to a cutting board, shred, and return to the slow cooker. Reduce sauce on high if too thin.
- Mix cabbage with mayonnaise, 1 tsp vinegar, salt, and sugar. Toast slider buns, then pile chicken and slaw onto each bun.
Notes
Allowing the shredded chicken to rest in the sauce for 10 minutes off the heat lets the flavors soak deep into the meat. If you’re toasting the buns, keep a close eye under the broiler so they char, not burn.
