Slow-Cooker Rotisserie Chicken Recipe

Ingredients
  

  • 1 whole chicken (4-5 lbs), giblets removed
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 lemon, halved (optional)
  • 1 small onion, quartered (optional)

Method
 

  1. Mix the smoked paprika, garlic powder, onion powder, thyme, salt, and pepper in a small bowl.
  2. Pat the chicken completely dry, rub it all over with olive oil, then coat the skin evenly with the spice blend. Stuff the cavity with lemon and onion if desired and tie the legs together.
  3. Place the chicken in a slow cooker and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until the thigh reaches 165°F.
  4. Move the chicken to a foil-lined baking sheet and broil on high for 3-5 minutes, rotating once, until the skin is deep golden and crisp.
  5. Let the chicken rest 10 minutes, then carve and serve with any juices from the pan.

Notes

Use a meat thermometer to be sure the chicken is cooked through; times will shift with the size of the bird. The skin gets its crunch solely from the broiler, so do not skip that step if you want it crisp.
