Slow Cooker Green Bean Casserole Recipe

Ingredients
  

  • 2 lbs fresh green beans, trimmed
  • 3 tbsp unsalted butter, divided
  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 1 cup chicken or vegetable broth
  • 1 cup whole milk
  • 1 tbsp soy sauce
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 ½ cups crispy fried onions, divided

Method
 

  1. Melt 2 tbsp butter in a large skillet over medium heat. Add mushrooms and onion; sauté 5–7 minutes until golden. Add garlic; cook 30 seconds.
  2. Push mushroom mixture aside; melt remaining 1 tbsp butter in the pan. Sprinkle in flour and whisk 1–2 minutes. Gradually whisk in broth and milk, then soy sauce, salt, and pepper. Simmer 2–3 minutes until thickened.
  3. Place green beans in a 6-quart slow cooker. Pour sauce over beans and stir to coat. Cover and cook on low 4–5 hours or high 2–3 hours, until beans are tender.
  4. Stir 1 cup fried onions into the casserole. Sprinkle remaining ½ cup on top. Cover and let sit 5–10 minutes. Serve immediately.

Notes

If you use frozen cut green beans, add them straight from the freezer. The casserole can be made a day ahead: cook the beans in the sauce, cool, and refrigerate. Reheat gently, then finish with the fried onions right before serving.
