- Melt 2 tbsp butter in a large skillet over medium heat. Add mushrooms and onion; sauté 5–7 minutes until golden. Add garlic; cook 30 seconds.
- Push mushroom mixture aside; melt remaining 1 tbsp butter in the pan. Sprinkle in flour and whisk 1–2 minutes. Gradually whisk in broth and milk, then soy sauce, salt, and pepper. Simmer 2–3 minutes until thickened.
- Place green beans in a 6-quart slow cooker. Pour sauce over beans and stir to coat. Cover and cook on low 4–5 hours or high 2–3 hours, until beans are tender.
- Stir 1 cup fried onions into the casserole. Sprinkle remaining ½ cup on top. Cover and let sit 5–10 minutes. Serve immediately.
Notes
If you use frozen cut green beans, add them straight from the freezer. The casserole can be made a day ahead: cook the beans in the sauce, cool, and refrigerate. Reheat gently, then finish with the fried onions right before serving.
