Ingredients
  

  • 6 medium apples, peeled and sliced ½ inch thick
  • ½ cup packed light brown sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp fine sea salt
  • 1 tbsp fresh lemon juice
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed dark brown sugar
  • ½ cup cold unsalted butter, cut into small cubes
  • Pinch of fine sea salt

Method
 

  1. Toss the sliced apples with the light brown sugar, cornstarch, cinnamon, nutmeg, ¼ tsp salt, and lemon juice until evenly coated.
  2. Combine the oats, flour, dark brown sugar, and a pinch of salt in a separate bowl, then work in the cold butter until the mixture forms coarse crumbs.
  3. Spread the apples in the slow cooker, sprinkle the oat topping evenly over the fruit, cover, and cook on low for 3 to 4 hours until the apples are tender and the topping is golden.
  4. Turn off the cooker, let the crisp rest uncovered for 10 minutes, then scoop into bowls and serve warm.

Notes

Cook time varies between slow cookers; start checking at 3 hours on low. The crisp needs that 10-minute rest after cooking so the topping firms up and the juices aren’t too runny.
