Method
- Core the apples and cut into rough 1-inch chunks. No peeling needed.
- Combine the apples, sugar, spices, salt, and cider in a 6-quart slow cooker. Stir well, cover, and cook on Low for 10 to 12 hours or High for 5 to 6 hours until the apples are very soft.
- Puree the mixture with an immersion blender until completely smooth.
- Continue cooking uncovered on High for 1 to 2 hours, stirring occasionally, until the butter is dark and thick and a spoonful holds its shape on a cold plate.
- Let cool briefly, then spoon into clean jars. Cool completely before sealing and refrigerating.
Notes
The butter will seem thin when hot, but it firms up a lot as it cools. If you plan to can the jars for shelf storage, process them in a boiling water bath for 10 minutes after filling.
