- Brown the beef in a large pot over medium-high heat until no pink remains, about 8 minutes. Drain all but 1 tbsp fat.
- Add onion and cook until translucent, 4 minutes. Stir in garlic for 30 seconds.
- Turn heat to medium-low and add chili powder, cinnamon, allspice, cloves, cumin, and cayenne; cook 1 minute. Stir in tomato sauce, broth, vinegar, Worcestershire, brown sugar, and chocolate.
- Bring to a boil, then reduce to low. Partially cover and simmer 1½ to 2 hours, stirring occasionally, until thick and deep mahogany. Season with salt.
- Serve over cooked spaghetti with a heavy blanket of shredded cheddar and diced onion.
Notes
The chili thickens as it cools, so feel free to loosen it with a splash of broth when reheating. This recipe doubles cleanly for a crowd, just extend the simmer by 15 minutes.
