Skin-On Garlic Mashed Red Potatoes Recipe

Ingredients
  

  • 2 lb red potatoes, scrubbed
  • 1 whole head of garlic
  • 1 tsp olive oil
  • 3 tbsp unsalted butter
  • 1/2 cup whole milk, warmed
  • 1/4 cup sour cream
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Method
 

  1. Heat oven to 400°F (200°C). Slice top off garlic, drizzle with olive oil, wrap in foil, and roast 40 minutes until soft.
  2. Cut potatoes into 1-inch chunks, cover with cold water, salt generously, and boil until fork-tender, 15 to 20 minutes. Drain.
  3. Return potatoes to pot, add butter, and mash. Stir in warmed milk, sour cream, salt, and pepper. Squeeze in roasted garlic and fold gently until combined.
  4. Spoon into a warm bowl, top with butter, and serve right away.

Notes

If you want an extra garlicky punch, squeeze in two whole heads of roasted garlic instead of one. The mash can sit covered in a warm pot for about 15 minutes before serving; stir in a little reserved cooking water if it thickens.
