Skillet Potatoes and Onions Recipe

Ingredients
  

  • 2 lb Yukon Gold potatoes, scrubbed
  • 1 large yellow onion
  • 2 tbsp unsalted butter
  • 1 tbsp neutral oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • Small handful fresh parsley, chopped (optional)

Method
 

  1. Slice the potatoes into even ¼-inch rounds. Halve the onion and slice into thin half-moons.
  2. Melt the butter and oil in a 12-inch skillet over medium-high heat. Add the potatoes in a single layer, season with salt and pepper, cover, and cook for 5 minutes.
  3. Scatter the onions over the potatoes, flip everything with a spatula, and cook uncovered for 6 to 8 minutes until the onions soften and turn golden.
  4. Raise the heat to high, spread the mixture into an even layer, and cook undisturbed for 3 to 4 minutes. Flip once more and cook another 2 to 3 minutes until deeply golden and crispy.
  5. Transfer to a serving plate, top with parsley, and serve hot.

Notes

Let the potatoes sit still during the final high-heat stage to build a crust. If the pan looks dry, add a small pat of butter. I like a little extra salt right before serving.
