Skillet Ground Beef Pot Pie Recipe

Ingredients
  

  • 1 lb ground beef (85/15)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 3 tbsp all-purpose flour
  • 1 ½ cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 refrigerated pie crust (half of a 14-oz box)
  • 1 egg, beaten with 1 tsp water

Method
 

  1. Brown ground beef in a 10-inch cast-iron skillet over medium-high heat, breaking it up, until no pink remains, 6 to 8 minutes. Drain all but 1 tablespoon of fat and transfer beef to a plate.
  2. Cook onion and carrots in the same skillet for 5 minutes, add garlic for 30 seconds, then sprinkle flour over and stir for 1 minute.
  3. Pour in beef broth, Worcestershire, thyme, salt, and pepper. Simmer, stirring, until thickened, 3 to 4 minutes. Stir in frozen peas, corn, and the beef. Remove from heat and let sit 5 minutes.
  4. Preheat oven to 400°F. Top filling with pie crust, crimp edges, cut vents, and brush with egg wash. Bake 25 to 30 minutes until golden. Rest 10 minutes before slicing.

Notes

For a lighter version, use ground turkey and puff pastry. The filling can be made a day ahead and refrigerated; reheat gently on the stovetop before topping with the crust and baking.
