Method
- Melt butter in a large skillet over medium heat. Add onion and cook, stirring once or twice, until soft, about 3 minutes.
- Add corn, sugar, salt, and pepper. Stir, then spread into an even layer. Cook undisturbed 3 to 4 minutes until golden on the bottom. Stir and repeat for another 3 to 4 minutes.
- Remove from heat, toss with fresh herbs, and serve hot.
Notes
If your corn is especially sweet and tender, you can skip the sugar. For a smoky twist, cook a couple strips of bacon in the skillet first and use the rendered fat with the butter.
