Ingredients
  

  • 1 lb boneless, skinless chicken thighs, cut into bite-size pieces
  • 2 tbsp taco seasoning
  • 1 tbsp vegetable oil
  • ½ cup salsa
  • 1 cup shredded Mexican blend cheese
  • 8 small corn tortillas
  • Toppings: sour cream, chopped cilantro, pickled onions, lime wedges

Method
 

  1. Toss chicken with taco seasoning in a bowl; set aside 5 minutes.
  2. Heat oil in a large skillet over medium-high. Add chicken in a single layer, cook 3 minutes without stirring, then toss and cook 3-4 minutes more until cooked through.
  3. Reduce heat to low. Stir in salsa, sprinkle cheese on top, cover, and let melt 2-3 minutes.
  4. Warm tortillas. Spoon cheesy chicken into tortillas, add toppings, and serve immediately.

Notes

Chicken thighs stay juicy; if using breasts, cut into smaller pieces and reduce cooking time. Pickled onions add a bright tang, but a squeeze of lime works if you’re short on time.
