Ingredients

  • 1 1/4 lb flank or skirt steak
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 3 tbsp orange juice
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 10 oz sturdy tortilla chips
  • 1 cup black beans, drained and rinsed
  • 2 cups shredded Monterey Jack or mild cheddar cheese
  • 1 cup pico de gallo
  • 1 cup guacamole
  • 1/2 cup sour cream
  • Handful of fresh cilantro leaves
  • Pickled jalapeños, for serving (optional)

Method

  1. Whisk olive oil, lime juice, orange juice, garlic, cumin, oregano, salt, and pepper. Marinate steak at room temperature for 20 minutes.
  2. Sear steak in a smoking hot cast iron skillet for 4 to 5 minutes per side. Rest 5 minutes, then slice against the grain.
  3. Wipe skillet, move rack 6 inches from broiler, and set broiler to high. Layer half the chips, beans, cheese, and steak. Repeat with remaining ingredients.
  4. Broil 3 to 4 minutes until cheese is bubbly and chip edges are lightly browned.
  5. Top with pico de gallo, guacamole, sour cream, cilantro, and pickled jalapeños. Serve hot from the skillet.

Notes

Let the steak rest a full 5 minutes before slicing so the juices settle. If you like your nachos extra crisp, spread the chips in a single layer on a sheet pan instead of stacking them high.
