Skillet Brussels Sprouts Recipe

Ingredients
  

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp high-heat cooking oil (avocado or canola)
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 2 cloves garlic, minced (optional)
  • 1 tbsp fresh lemon juice or grated Parmesan (optional)

Method
 

  1. Toss the trimmed and halved sprouts with the oil, salt, and pepper in a bowl until well coated.
  2. Heat a large skillet over high heat for about 2 minutes. Arrange the sprouts in a single layer, cut side down, and cook undisturbed for about 4 minutes, until deeply browned.
  3. Turn the sprouts with tongs and cook for another 3 to 4 minutes, stirring once or twice, until bright green with crispy edges and fork-tender.
  4. Push the sprouts to the sides of the pan, add the garlic to the center, and stir for 30 seconds until fragrant. Toss to combine, transfer to a serving dish, and finish with lemon juice or Parmesan if you like.

Notes

These are at their best right out of the pan while the edges are crisp. If you prefer a softer sprout, add 2 tablespoons of water to the skillet after flipping, cover, and let them steam for 2 minutes before uncovering and browning again briefly.
