Ingredients
  

  • 2 very ripe bananas
  • ¼ cup unsweetened applesauce
  • 1 large egg
  • ¼ cup plain whole milk yogurt
  • ¼ cup mild oil (melted coconut oil or vegetable oil)
  • 1 tsp vanilla extract
  • 1¼ cups whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 6-inch round cake pan. Mash the bananas in a large bowl, then whisk in the applesauce, egg, yogurt, oil, and vanilla until smooth.
  2. In a separate bowl, whisk the flour, baking powder, baking soda, and cinnamon if using. Add to the wet ingredients and fold just until no dry streaks remain.
  3. Pour the batter into the prepared pan and smooth the top. Bake for 20 to 25 minutes, until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  4. Cool the cake in the pan on a wire rack for 10 minutes, then run a knife around the edge, turn it out, and let it cool completely.
  5. Frost with whipped yogurt and cream cheese if desired, pile a few raspberries or banana slices on top, and serve.

Notes

If you use a dark metal or glass pan, the cake may bake a minute or two faster, so start checking a couple of minutes early. This cake is nicest the day it is made, but it stays moist for a few days refrigerated. For a tiny baby who is just starting solids, you can skip the frosting entirely and serve a plain slice to let the banana flavor shine.
