- In a small bowl, whisk the soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and sriracha until the honey dissolves.
- Place the tuna cubes in a bowl, pour the marinade over, toss gently to coat, and refrigerate for 10–15 minutes.
- Spoon the tuna over rice, top with green onions and sesame seeds, and serve immediately.
Notes
Use only sashimi-grade tuna for raw consumption. The marinade can be made up to a week ahead and stored in the fridge; do not marinate the tuna for more than 20 minutes or it will start to cure.
