Ingredients

  • 1 lb sashimi-grade ahi tuna, cut into ¾-inch cubes
  • 3 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp honey
  • 1 tsp minced garlic
  • ½ tsp grated fresh ginger
  • 1 tsp sriracha (optional)
  • 2 green onions, sliced thin
  • 1 tsp sesame seeds (black and white)

Method

  1. In a small bowl, whisk the soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and sriracha until the honey dissolves.
  2. Place the tuna cubes in a bowl, pour the marinade over, toss gently to coat, and refrigerate for 10–15 minutes.
  3. Spoon the tuna over rice, top with green onions and sesame seeds, and serve immediately.

Notes

Use only sashimi-grade tuna for raw consumption. The marinade can be made up to a week ahead and stored in the fridge; do not marinate the tuna for more than 20 minutes or it will start to cure.
