Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple, undrained
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 container (8 oz) frozen whipped topping, thawed
  • 1/4 cup crushed pineapple, well drained (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch pan. Whisk flour, sugar, baking soda, and salt. Stir in eggs, undrained pineapple, oil, and vanilla until combined.
  2. Pour batter into pan and bake 30 to 35 minutes until golden and a toothpick has moist crumbs. Cool completely in the pan.
  3. Beat cream cheese and powdered sugar until smooth. Fold in whipped topping and drained pineapple if using.
  4. Spread topping over the cooled cake, cut into squares, and serve.

Notes

The cake must be completely cool before you add the topping, otherwise the topping will melt and get runny. For the cleanest slices, let the assembled cake chill in the fridge for 20 minutes before cutting.
