Method
- Boil pasta in salted water until just shy of al dente, reserving a mug of pasta water before draining.
- Melt 2 tbsp butter in a large skillet over medium-high heat, sear shrimp in a single layer with salt and pepper for 2 minutes per side, then set aside.
- Lower heat to medium, melt remaining 2 tbsp butter, and cook garlic and red pepper flakes for 30 seconds. Add wine and reduce for 2 minutes.
- Toss pasta with the sauce and a splash of pasta water, return shrimp and lemon juice, then toss again. Sprinkle with parsley and serve hot with extra lemon wedges.
Notes
If your shrimp are very small, check them at 1 minute per side; they cook fast and go from tender to rubbery in seconds. The reserved pasta water is your best tool for fixing a sauce that thickens too much, so never dump it all down the drain.
