Shrimp Ramen Noodles Recipe

Ingredients
  

  • 2 packages instant ramen noodles, seasoning packets discarded
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups low-sodium chicken or vegetable broth
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp toasted sesame oil
  • 1 tsp sriracha or gochujang
  • 2 green onions, sliced
  • 1 tsp toasted sesame seeds
  • salt and pepper

Method
 

  1. Bring a large pot of water to a boil. Add ramen noodles and cook according to package directions (about 3 to 4 minutes). Drain and set aside.
  2. While the noodles cook, pat shrimp dry and season with salt and pepper. Heat oil in a large skillet over medium-high. Sear shrimp in a single layer until pink and curled, about 2 minutes per side. Transfer to a plate.
  3. In the same skillet, cook garlic and ginger for 30 seconds. Pour in broth, soy sauce, mirin, sriracha, and sesame oil. Bring to a simmer and cook 2 minutes.
  4. Divide noodles between bowls, ladle broth over them, and top with shrimp, green onions, and sesame seeds. Serve immediately.

Notes

For deeper flavor, stir 1 tbsp miso paste into the broth off the heat. A soft-boiled egg is a great add; drop eggs into boiling water 6 minutes before the noodles go in, then peel and halve.
