Shrimp Ramen Bowl Recipe

Ingredients
  

  • 4 cups low-sodium chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • ½ tsp red pepper flakes
  • 1 cup sliced shiitake mushrooms
  • 2 baby bok choy, halved lengthwise
  • ½ lb large shrimp, peeled and deveined
  • 2 (3 oz) packages instant ramen noodles, seasoning packets discarded
  • 2 green onions, thinly sliced
  • Chili oil or toasted sesame seeds, for serving

Method
 

  1. Heat sesame oil in a medium pot over medium heat. Add garlic, ginger, and red pepper flakes; cook 30 seconds until fragrant.
  2. Pour in chicken broth and soy sauce. Bring to a gentle simmer.
  3. Add mushrooms and simmer 3 minutes. Add bok choy, shrimp, and ramen noodles; cook 3 to 4 minutes until shrimp are pink and noodles are tender.
  4. Ladle into bowls, garnish with green onions and chili oil, and serve hot.

Notes

The broth can be made ahead and chilled separately; reheat and then cook the shrimp and noodles just before serving. If you want a jammy soft-boiled egg in each bowl, cook the eggs first while the broth simmers.
