Shrimp Po Boy Recipe

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1 cup buttermilk
  • 1 tbsp hot sauce
  • 1 cup all-purpose flour
  • ½ cup fine cornmeal
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Vegetable or peanut oil, for frying
  • 4 soft French bread rolls, split
  • Shredded iceberg lettuce
  • Sliced tomato
  • Dill pickle chips
  • ½ cup mayonnaise
  • 1 tbsp Creole or whole-grain mustard
  • 1 tbsp ketchup
  • 1 tbsp dill pickle relish
  • 1 tsp hot sauce
  • 1 tsp lemon juice
  • ½ tsp paprika

Method
 

  1. Soak the shrimp in the buttermilk and 1 tablespoon hot sauce for 15 minutes.
  2. Stir together the mayonnaise, mustard, ketchup, relish, 1 teaspoon hot sauce, lemon juice, ½ teaspoon paprika, and a pinch of salt and pepper to make the rémoulade.
  3. Heat oil to 350°F. Dredge the shrimp in a mixture of the flour, cornmeal, smoked paprika, cayenne, garlic powder, salt, and black pepper. Fry in batches for about 3 minutes until golden and crisp. Drain on a wire rack.
  4. Spread rémoulade on the rolls, pile on the fried shrimp, and top with lettuce, tomato, and pickles. Serve immediately.

Notes

If frying in batches, keep cooked shrimp warm in a 200°F oven on a wire rack while you finish the rest.
