Shrimp Macaroni Salad Recipe

Ingredients
  

  • 8 oz elbow macaroni
  • 1 lb large shrimp, peeled and deveined
  • 2 celery stalks, finely diced
  • 1/2 red bell pepper, finely diced
  • 3 green onions, thinly sliced
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1/2 tsp Old Bay seasoning
  • Salt and black pepper
  • 2 tbsp chopped fresh dill

Method
 

  1. Cook macaroni and shrimp in salted boiling water until pasta is just tender and shrimp are pink, about 8 to 10 minutes total. Drain and rinse with cold water until cool.
  2. Whisk together mayonnaise, sour cream, Dijon, lemon juice, Old Bay, salt, and pepper.
  3. Fold pasta, shrimp, celery, bell pepper, and green onions into the dressing until evenly coated.
  4. Cover and refrigerate at least 1 hour. Stir again and add a little mayo or milk if the salad seems dry.
  5. Spoon into a serving bowl, top with fresh dill and black pepper, and serve cold.

Notes

Chill time is not included in the total. Plan for at least 1 hour in the fridge, but overnight is even better for the flavor.
