Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 cups cold cooked white rice
  • 2 tbsp vegetable oil
  • 2 large eggs, lightly beaten
  • 1 small yellow onion, diced
  • 1 medium carrot, diced
  • 1/2 cup frozen peas
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1/4 tsp white pepper
  • 3 scallions, sliced thin
  • Salt to taste

Method

  1. Heat 1 tbsp oil in a large skillet over medium-high heat. Sear shrimp 2 minutes per side until pink, then set aside.
  2. Lower heat to medium. Pour in eggs, cook 1 minute while breaking into curds, then set aside with shrimp.
  3. Add remaining oil, raise heat to medium-high. Sauté onion, carrot, and scallion whites for 3–4 minutes. Add garlic and cook 30 seconds.
  4. Add cold rice, spread into a layer, and cook 1–2 minutes undisturbed until crisp. Toss and repeat. Pour in soy sauce and white pepper, toss, then stir in peas and cook 1 minute.
  5. Return shrimp and eggs to the pan. Drizzle sesame oil on top, fold gently until warm. Garnish with scallion greens and serve immediately.

Notes

Make sure the rice is thoroughly chilled before you start; day-old is best. If you’re using low-sodium soy sauce, taste at the end and add a pinch of salt if it needs it. Serve right away while the rice is still crisp.
