Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 2 ears corn, cut into thirds
  • 8 oz baby potatoes, halved
  • 6 oz andouille sausage, sliced into 1/2-inch rounds
  • 4 tbsp unsalted butter, melted
  • 1 tbsp Old Bay seasoning
  • 3 cloves garlic, minced
  • 1 lemon, half juiced and half cut into wedges
  • Salt and black pepper
  • Fresh parsley, chopped

Method
 

  1. Toss the shrimp, corn, potatoes, and sausage with the melted butter, lemon juice, Old Bay, garlic, salt, and pepper in a large bowl.
  2. Divide the mixture evenly among four 12-inch foil squares, piling it in the center with space around the edges.
  3. Seal the packets by folding the long edges twice and pinching the short ends, then grill over medium-high heat for 12–15 minutes or bake at 425°F for 15–18 minutes.
  4. Open the packets carefully at the table, scatter parsley and lemon wedges over the top, and serve while the butter sauce is bubbling.

Notes

If you’re using the oven, the bottom of the packets may brown a little, and that’s completely fine. Serving directly from the foil keeps the casual feel and holds every drop of the sauce right where you want it.
