Shrimp and Sausage Sheet Pan Recipe

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced into 1/2-inch rounds
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 1 small red onion, sliced into wedges
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt, to taste
  • 1 lemon, cut into wedges
  • 2 tbsp chopped fresh parsley

Method
 

  1. Heat oven to 400°F (200°C). Toss sausage, bell peppers, onion, olive oil, Cajun seasoning, garlic powder, and a pinch of salt in a large bowl until coated.
  2. Spread the mixture on a large sheet pan in a single layer. Roast for 15 minutes, until sausage starts to brown and peppers soften.
  3. Remove pan, stir everything, and scatter shrimp across the top. Return to oven and roast 5 to 6 minutes, until shrimp are pink and just opaque.
  4. Squeeze two lemon wedges over the pan and sprinkle with parsley. Serve hot with remaining lemon wedges.

Notes

Shrimp size will shift the final roast time, so check early. If your Cajun seasoning already contains salt, skip the extra pinch in step 1 and season to taste after roasting.
