- Cook penne in salted boiling water until al dente. Reserve ¼ cup pasta water, then drain and set aside.
- Sear sausage in olive oil over medium-high heat for about 4 minutes until browned and crisp. Remove and set aside, leaving the fat in the pan.
- Toss shrimp with Cajun seasoning and sear in the same skillet for 2 minutes per side until pink. Remove and set aside.
- Lower heat to medium, cook garlic and tomato paste for 1 minute, then stir in heavy cream and chicken broth. Simmer 2 minutes until thickened.
- Return pasta, sausage, and shrimp to the skillet along with a splash of pasta water. Toss over low heat for 1 minute, top with parsley, and serve.
Notes
If your skillet runs hot, the heavy cream can reduce too fast and break. Keep the heat at a gentle simmer for the sauce, not a rolling boil. The whole dish comes together quickly once the pasta is cooked, so have all your ingredients measured and ready before you start searing.
