Method
- Combine broth, onion, garlic, bay leaf, salt, and peppercorns in a saucepan. Bring to a gentle simmer over medium heat.
- Add chicken breasts, making sure they are submerged. Cover, reduce heat to low, and cook 10-12 minutes until the thickest part reaches 165°F.
- Transfer chicken to a cutting board and rest 5 minutes. Shred with two forks.
- Toss the shredded chicken with a few spoonfuls of the warm poaching liquid and serve.
Notes
Strain the leftover broth and refrigerate for up to 3 days or freeze for later. If you’re not serving the chicken right away, store it with a splash of broth to keep it moist.
