- Season the beef with salt and pepper and sear in olive oil over medium-high heat, about 4 minutes per side, until deeply browned. Remove and set aside.
- Sauté the onion in the same pot for 3 minutes, then add the garlic, chili powder, cumin, oregano, chipotle peppers, and adobo sauce, and stir for 1 minute.
- Preheat the oven to 325°F (163°C). Return the beef to the pot with the broth and lime juice, bring to a simmer, cover, and braise in the oven for 180 minutes until fork-tender.
- Shred the beef with two forks, return it to the sauce, and simmer uncovered for 8 minutes until the sauce thickens.
- Warm the tortillas, fill with the shredded beef, and top with cilantro, onion, and lime wedges.
Notes
The braise itself needs no attention once it's in the oven, so this is a good one to start before you run errands or settle in for a movie. If you're short on time, this also works well made a day ahead since the beef only gets better sitting in its sauce overnight in the fridge.
