- Pat the chuck roast dry, mix the dry spices, and rub all over the beef. Sear in hot oil for about 4 minutes per side, then place in the slow cooker.
- Pour the broth and Worcestershire around the roast, sprinkle with brown sugar, cover, and cook on low for 8 hours (or high for 4) until fork-tender.
- Remove the beef, let it rest 5 minutes, then shred with two forks. Reduce the cooking liquid on the stovetop if needed, then stir the shredded beef back into the sauce.
- In a bowl, whisk together the mayo, vinegar, sugar, salt, and pepper for the slaw. Toss in the coleslaw mix and refrigerate until you are ready to assemble.
- Brush the cut sides of the buns with melted butter and broil for 1 to 2 minutes until golden. Pile the hot beef onto the bottom buns, top with chilled slaw, and serve.
Notes
The beef can be cooked on high for 4 hours if time is tight. The slaw can be made up to a day in advance and kept chilled; it gets even crunchier as it sits.
