Ingredients
  

  • 3 to 4 lb beef chuck roast
  • 2 tbsp vegetable oil
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup ketchup
  • 1/4 cup light brown sugar, packed
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • For serving: soft sandwich buns, coleslaw, pickles, sliced cheese (optional)

Method
 

  1. Heat oil in a large skillet over medium-high heat. Season roast with salt and pepper; sear on all sides, about 4 minutes per side. Transfer to slow cooker.
  2. Add onion and garlic to the skillet; cook 3 minutes until softened. Deglaze with a splash of broth, scraping up browned bits, then pour over beef.
  3. Whisk ketchup, brown sugar, vinegar, Worcestershire, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne (if using). Pour over beef, then add remaining broth.
  4. Cover and cook on LOW for 8 hours (or HIGH for 5 hours) until beef is fork-tender.
  5. Remove beef; shred with two forks, discarding large fat pieces. Return to sauce and stir to coat.
  6. Pile beef onto toasted buns, top with coleslaw or pickles, and serve immediately.

Notes

The time listed is for low slow cooker setting; if using high, cook about 300 mins (5 hours). Resting the shredded beef in the sauce on WARM for 10 minutes deepens the flavor.
