Method
- Heat oil in a large skillet over medium-high heat. Season roast with salt and pepper; sear on all sides, about 4 minutes per side. Transfer to slow cooker.
- Add onion and garlic to the skillet; cook 3 minutes until softened. Deglaze with a splash of broth, scraping up browned bits, then pour over beef.
- Whisk ketchup, brown sugar, vinegar, Worcestershire, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne (if using). Pour over beef, then add remaining broth.
- Cover and cook on LOW for 8 hours (or HIGH for 5 hours) until beef is fork-tender.
- Remove beef; shred with two forks, discarding large fat pieces. Return to sauce and stir to coat.
- Pile beef onto toasted buns, top with coleslaw or pickles, and serve immediately.
Notes
The time listed is for low slow cooker setting; if using high, cook about 300 mins (5 hours). Resting the shredded beef in the sauce on WARM for 10 minutes deepens the flavor.
