Shredded BBQ Chicken Sandwiches Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 tbsp neutral oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup BBQ sauce
  • 1/4 cup chicken broth or water
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • Freshly ground black pepper
  • 2 cups finely shredded green cabbage
  • 2 tbsp mayonnaise
  • 1/2 tsp apple cider vinegar (for slaw)
  • Pinch of sugar
  • 4 soft hamburger buns, split
  • Butter or oil for toasting

Method
 

  1. Heat oil in a large skillet over medium heat. Cook onion 4 minutes, add garlic for 30 seconds. Stir in BBQ sauce, broth, 1 tbsp vinegar, paprika, and salt. Add chicken, cover, and simmer 12–14 minutes, flipping once, until 165°F.
  2. Transfer chicken to a board. Reduce sauce 2–3 minutes. Shred chicken and toss with sauce.
  3. Mix mayonnaise, 1/2 tsp vinegar, sugar, salt, and pepper in a bowl. Add cabbage and toss.
  4. Toast buns, pile on chicken, and top with slaw. Serve immediately.

Notes

The shredded chicken tastes even better the next day. If you plan to have leftovers, store the slaw separately and build sandwiches fresh when you reheat. A quick drizzle of extra vinegar over the finished sandwich really makes the flavors sing.
