- Grate the pear, garlic, and ginger into a medium bowl until you have a wet paste that measures about 1/3 cup.
- Whisk in the soy sauce, brown sugar, sesame oil, rice vinegar, green onion, and sesame seeds until the sugar dissolves and the mixture looks glossy, about 1 minute.
- Pour the marinade over 2 to 3 pounds of short ribs, turn to coat, and refrigerate for at least 2 hours or up to 24 before cooking.
Notes
The hands-on time is quick, but the marinade needs at least 2 hours with the meat for the flavor to penetrate. Overnight is even better. If using flanken-cut short ribs, they cook fast and can char easily, so watch them closely on the grill.
