Sheet Pan Vegan Rice Bowl with Creamy Peanut Sauce Recipe

Ingredients
  

  • 1 cup dry jasmine rice, rinsed
  • 14 to 16 oz block extra-firm tofu
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce or tamari, divided
  • 3 to 4 cups broccoli florets
  • 2 medium carrots, peeled and sliced
  • 2 tbsp neutral oil, divided
  • 1/4 cup creamy peanut butter
  • 1 tbsp fresh lime juice
  • 1 tbsp maple syrup
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • 2 to 3 tbsp warm water
  • Sliced scallions and sesame seeds, for serving
  • Salt and black pepper

Method
 

  1. Heat oven to 425°F (220°C). Cook rice according to package directions. Press tofu, cut into 1-inch cubes, and toss with 1 tbsp cornstarch, 1 tbsp soy sauce, and 1 tbsp oil. On a sheet pan, toss broccoli and carrots with remaining 1 tbsp oil, salt, and pepper, then push vegetables to one half. Spread tofu on the other half in a single layer. Roast 25 to 30 minutes, flipping tofu and tossing vegetables halfway.
  2. While the sheet pan roasts, whisk together peanut butter, remaining 1 tbsp soy sauce, lime juice, maple syrup, garlic, and ginger. Stir in warm water a little at a time until smooth and pourable.
  3. Divide rice among bowls. Top with roasted tofu and vegetables. Drizzle with peanut sauce and garnish with scallions and sesame seeds. Serve warm.

Notes

Press the tofu well for the crispest edges. The peanut sauce thickens as it cools, so stir in a splash of water before serving if it has been sitting.
