Ingredients
  

  • 1 lb smoked sausage (kielbasa or andouille), cut into 1‑inch pieces
  • 1 ½ lbs baby potatoes, halved
  • 1 large red bell pepper, sliced into strips
  • 1 medium yellow onion, sliced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • Chopped fresh parsley, for serving

Method
 

  1. Preheat oven to 425°F (220°C). On a large rimmed baking sheet, combine halved potatoes, sausage pieces, bell pepper strips, and onion. Drizzle with 2 tablespoons olive oil, then sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat and spread in an even layer.
  2. Roast for 25 minutes. Remove pan from oven and stir. Drizzle with remaining 1 tablespoon oil, toss again, and spread back into a single layer.
  3. Return to oven and roast for another 10 to 15 minutes, until potatoes are fork‑tender and sausage is browned.
  4. Switch oven to broil and broil for 3 to 5 minutes, watching closely, until edges are crisp and slightly charred. Let cool for a minute, sprinkle with parsley, and serve straight from the pan.

Notes

A large sheet pan is key for crispiness; a smaller pan traps steam. If your oven runs hot, keep an eye on the broiler because the peppers can blacken quickly.
