Ingredients
  

  • 3¾ cups (470g) all-purpose flour
  • 1½ cups warm water (110°F to 115°F)
  • 1 packet (2¼ tsp) instant yeast
  • 2 tbsp olive oil, plus more for the pan
  • 2 tsp sugar
  • 1½ tsp fine sea salt
  • ¾ cup pizza sauce
  • 8 oz low-moisture mozzarella, shredded
  • 4 oz pepperoni
  • Fresh basil leaves, for garnish

Method
 

  1. Combine the flour, yeast, sugar, and salt in a large bowl. Add the warm water and 2 tbsp olive oil. Stir until a shaggy dough forms, then knead on a floured surface for 7 to 8 minutes until smooth and elastic.
  2. Place the dough in an oiled bowl, cover, and let rise in a warm spot until doubled, 1 to 1½ hours.
  3. Generously oil a 13-by-18-inch half-sheet pan. Stretch the dough to fill the pan, dimple with your fingertips, cover, and let rise until puffy, 20 to 30 minutes.
  4. Spread the sauce over the dough, leaving a border. Scatter the mozzarella evenly and arrange the pepperoni on top.
  5. Bake on the lowest rack at 500°F for 18 to 22 minutes, rotating once, until the cheese is bubbly and the bottom crust is deep golden.
  6. Cool in the pan for 5 minutes, then slide onto a cutting board, slice into squares, and garnish with fresh basil.

Notes

The hands-off rising time (about 1½ to 2 hours total) isn’t counted in the prep or cook times. For the crispest bottom, use a dark metal pan. If your kitchen runs cool, let the dough rise inside the oven with just the light on.
