Ingredients
  

  • 2 large sweet onions, sliced into 1/2-inch rings
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 1/2 cups panko breadcrumbs
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or olive oil spray

Method
 

  1. Preheat oven to 425°F with two lined baking sheets. Soak onion rings in buttermilk for 10 minutes.
  2. Mix flour, paprika, garlic powder, salt, and pepper. Dredge rings in flour, shaking off excess.
  3. Dip flour-coated rings back into buttermilk, then press into panko. Arrange on sheets, spray tops with oil.
  4. Bake 18–20 minutes, flipping halfway, until deep golden and crisp.
  5. Transfer to a rack, sprinkle with flaky salt, and serve immediately.

Notes

For the best crunch, serve these right out of the oven; they lose crispness as they sit. You can hold the first batch on a wire rack in a 200°F oven while the second tray bakes.
