- Preheat oven to 425°F with two lined baking sheets. Soak onion rings in buttermilk for 10 minutes.
- Mix flour, paprika, garlic powder, salt, and pepper. Dredge rings in flour, shaking off excess.
- Dip flour-coated rings back into buttermilk, then press into panko. Arrange on sheets, spray tops with oil.
- Bake 18–20 minutes, flipping halfway, until deep golden and crisp.
- Transfer to a rack, sprinkle with flaky salt, and serve immediately.
Notes
For the best crunch, serve these right out of the oven; they lose crispness as they sit. You can hold the first batch on a wire rack in a 200°F oven while the second tray bakes.
