- Preheat oven to 400°F (200°C). Heat oil in a skillet over medium-high. Add beef and onion, cook until browned, 6 to 8 minutes. Stir in garlic and taco seasoning, cook 1 minute. Add water and beans, simmer until thickened, about 2 minutes. Season with salt.
- Spread half the chips on a rimmed baking sheet. Top with half the beef mixture and 1 cup cheese. Repeat with remaining chips, beef, and cheese.
- Bake 8 to 10 minutes until cheese is melted and bubbling.
- Remove from oven. Scatter avocado, sour cream, salsa, jalapeños, and cilantro over the top. Serve immediately with lime wedges.
Notes
Use a sturdy chip. If making your own taco seasoning, combine 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp oregano, and a pinch of cayenne. The beef mixture can be made ahead and reheated. Leftovers do not keep well, so plan to finish the pan.
