Ingredients
  

  • 1 bag (about 12 oz) tortilla chips
  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • ¾ cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 2 cups shredded Mexican blend cheese
  • ½ cup diced red onion
  • 1 large tomato, seeded and diced
  • 1 avocado, diced
  • ¼ cup pickled jalapeño slices
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro
  • 1 lime, cut into wedges

Method
 

  1. Preheat oven to 400°F (200°C). Brown the beef in a skillet over medium-high heat for 6-8 minutes, then stir in taco seasoning and water and simmer until slightly thickened, about 3 minutes.
  2. Spread chips in a single layer on a large rimmed baking sheet. Top with beans, corn, beef, and 1 cup of the cheese.
  3. Bake for 10-12 minutes until cheese melts and chips at the edges turn golden. Optionally broil for 1-2 minutes for bubbly cheese.
  4. Remove from oven and sprinkle with remaining cheese, then pile on onion, tomato, avocado, jalapeños, and sour cream.
  5. Scatter cilantro over the top, add lime wedges, and serve immediately.

Notes

Serve right away, the nachos will stay crisp for about 10 minutes. Set out extra sour cream, salsa, and lime on the side so everyone can add more as they eat.
