- Preheat oven to 400°F and line a rimmed sheet pan with parchment or foil. Whisk breadcrumbs, milk, egg, onion, Worcestershire, garlic powder, salt, and pepper in a large bowl until pasty.
- Add ground beef and mix gently with your hands just until combined. Shape into an 8×4-inch flat loaf, about 1.5 inches thick, on the prepared pan.
- Stir together ketchup, brown sugar, and Dijon. Brush half the glaze over the meatloaf and bake 25 to 30 minutes, brushing on remaining glaze near the end, until the center reads 160°F.
- Rest the meatloaf on the pan for 5 minutes, then slice thickly and serve with any pan glaze.
Notes
Let the meatloaf rest for a full 5 minutes before slicing so the juices settle. If you use a thermometer, pull the pan from the oven when the center hits 160°F; it will climb a couple degrees as it rests.
