- Heat oven to 425°F. Toss halved potatoes with 1 1/2 tbsp olive oil, 1/2 tsp smoked paprika, 1/4 tsp garlic powder, 1/2 tsp salt, and pepper. Spread on a rimmed baking sheet and roast 15 minutes.
- In the same bowl, toss sliced kielbasa, peppers, onion, remaining 1 1/2 tbsp olive oil, remaining 1/2 tsp smoked paprika, 1/4 tsp garlic powder, 1/4 tsp salt, and a pinch of pepper. After potatoes have roasted 15 minutes, remove sheet pan, add sausage mixture, stir to combine. Roast 15 to 18 minutes until potatoes are tender and sausage is browned.
- Switch oven to broil (optional). Broil 2 to 3 minutes, watching closely, until edges crisp and peppers blister.
- Serve straight from the pan or on a platter with extra pepper and flaky salt. Serve hot.
Notes
If you skip the broil step, the dish is still delicious and a few minutes faster. Let it rest for a couple of minutes after roasting so the potatoes set and don’t steam when you plate them. Leftovers are great crisped back up in a skillet.
