Sheet Pan Ground Turkey Nachos Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey (93/7 lean)
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp fine sea salt
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 large bag (12 oz) sturdy tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • Fresh toppings: diced tomatoes, sliced avocado, sour cream, chopped cilantro, pickled jalapeños, lime wedges

Method
 

  1. Preheat oven to 400°F. Heat oil in a large skillet over medium-high. Crumble in the turkey, cook undisturbed 2 minutes, then break apart and cook until no pink remains, about 5-6 minutes.
  2. Reduce heat to medium. Stir in chili powder, cumin, garlic powder, and salt; cook 30 seconds until fragrant. Add beans and corn, cook 2-3 minutes to warm through.
  3. Spread half the chips on a sheet pan. Top with half the turkey mixture and half the cheese. Repeat with remaining chips, turkey, and cheese.
  4. Bake 8-10 minutes until cheese is bubbly and edges are golden. Remove from oven, pile on fresh toppings, and serve immediately with lime wedges.

Notes

If the turkey releases a lot of liquid while browning, drain it off before adding the spices to keep the chips crisp. The total time assumes you thaw the corn while the turkey cooks.
