Ingredients
  

  • 8 thick slices brioche or challah (about 1 lb)
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp fine sea salt
  • 2 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon

Method
 

  1. Preheat oven to 375°F. Whisk the eggs, milk, cream, 1/4 cup sugar, vanilla, 1 tsp cinnamon, and salt together.
  2. Dip each bread slice into the custard, letting excess drip off, and arrange them on a buttered rimmed baking sheet.
  3. Whisk the 2 tbsp sugar with 1/2 tsp cinnamon and sprinkle over the tops. Bake for 20 to 25 minutes until puffed, golden, and set.
  4. Serve immediately with maple syrup, powdered sugar, or fresh berries.

Notes

If your bread is very fresh and soft, dry the slices on a baking sheet in a 300°F oven for 10 minutes before soaking. This helps them hold their shape and absorb the custard without turning mushy.
