Ingredients
  

  • 12 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Butter or cooking spray, for greasing the pan

Method
 

  1. Heat oven to 350°F (175°C) and grease a 13x18-inch rimmed baking sheet. In a large bowl, whisk the eggs, milk, salt, and black pepper until pale and frothy.
  2. Pour the mixture into the prepared pan, tilt to spread evenly, and bake for 12 to 15 minutes, until the edges are set and the center jiggles only faintly.
  3. Remove from the oven, let the eggs rest in the pan for 5 minutes, then slice into 12 squares and serve warm.

Notes

If you are adding cheese, vegetables, or meat, scatter them over the egg mixture right after pouring it into the pan rather than whisking them in. The eggs will release most easily from a buttered or parchment-lined pan.
