Ingredients
  

  • 12 large eggs
  • 1/4 cup whole milk
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked crumbled bacon or sausage

Method
 

  1. Preheat oven to 350°F (175°C). Whisk eggs, milk, salt, and pepper until smooth.
  2. Grease a quarter sheet pan with melted butter, pour in the egg mixture, and scatter cheese and bacon evenly.
  3. Bake 12 to 15 minutes until the center is just set and no longer jiggles.
  4. Cool 2 minutes, slide egg sheet onto a cutting board, slice into 12 squares, and stack onto sandwiches.

Notes

For the cleanest cuts, let the eggs cool a little longer before slicing. This recipe makes 12 squares, which is enough for 6 hearty sandwiches with 2 squares each. You can halve the recipe for a smaller pan or fewer sandwiches.
