Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 2 cups semi-sweet chocolate chips

Method

  1. Preheat the oven to 350°F (180°C). Line a 13x18-inch half sheet pan with parchment paper, leaving a little overhang on the sides.
  2. In a large bowl, with an electric mixer, beat the softened butter, brown sugar, and granulated sugar on medium speed until light and fluffy, about 3 minutes.
  3. Beat in the eggs one at a time, then the vanilla, mixing until combined.
  4. In a separate bowl, whisk the flour, baking soda, and salt. Gradually add to the butter mixture on low speed, mixing just until the dough comes together.
  5. Fold in the chocolate chips by hand until evenly distributed.
  6. Press the dough into the prepared pan, leaving a 1-inch border. Bake for 18 to 22 minutes, until golden and set. Cool in the pan on a wire rack for at least 15 minutes, then lift out, slice, and serve.

Notes

The cookie cake will be very soft when warm and firms up as it cools. Give it at least 15 minutes before slicing, but it's delicious while still slightly warm.
