Sheet Pan Chicken Fajitas Recipe

Ingredients
  

  • 1 lb boneless skinless chicken breasts, cut into ½-inch strips
  • 2 bell peppers (1 red, 1 green), sliced into strips
  • 1 medium red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Lime wedges, for serving
  • Flour or corn tortillas, for serving

Method
 

  1. Stir together chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
  2. Place chicken strips, peppers, and onion on a sheet pan. Drizzle with olive oil and sprinkle the seasoning mix over everything. Toss until evenly coated.
  3. Heat oven to 425°F (220°C). Line a baking sheet with parchment and spread the mixture in a single layer.
  4. Roast for 15 minutes, stirring halfway, until chicken reaches 165°F (74°C) and peppers are tender with charred spots.
  5. Warm tortillas, pile on the chicken and peppers, squeeze lime over the top, and serve immediately.

Notes

If you prefer a bit more char, turn on the broiler for the last 1 to 2 minutes and watch carefully. The chicken will continue to cook slightly after you pull it from the oven, so letting it rest a minute on the pan is fine.
