- Stir together chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
- Place chicken strips, peppers, and onion on a sheet pan. Drizzle with olive oil and sprinkle the seasoning mix over everything. Toss until evenly coated.
- Heat oven to 425°F (220°C). Line a baking sheet with parchment and spread the mixture in a single layer.
- Roast for 15 minutes, stirring halfway, until chicken reaches 165°F (74°C) and peppers are tender with charred spots.
- Warm tortillas, pile on the chicken and peppers, squeeze lime over the top, and serve immediately.
Notes
If you prefer a bit more char, turn on the broiler for the last 1 to 2 minutes and watch carefully. The chicken will continue to cook slightly after you pull it from the oven, so letting it rest a minute on the pan is fine.
