Method
- Heat oven to 425°F (220°C) with a rack in the upper third. Line a rimmed baking sheet with foil. Gently mix beef, salt, pepper, garlic powder, onion powder, and smoked paprika. Shape into 4 patties slightly wider than the buns and press an indent in the center. Place on the sheet.
- Bake 8 minutes, until edges start to brown and centers are still pink (about 130°F / 54°C).
- Switch to broil on high. Top each patty with cheese and broil 2 to 3 minutes until cheese is bubbly and patty edges are deeply browned. Move patties to a plate and tent with foil.
- Pour off excess grease. Place buns cut side up on the same pan, brush with melted butter, and broil 1 minute until golden.
- Assemble burgers on toasted buns with your chosen toppings and serve immediately.
Notes
Let the cooked patties rest for 5 minutes before building the burgers. If you can, chill the shaped patties for 15 minutes while the oven heats; the cold fat helps develop an even better crust under the broiler.
