Ingredients
  

  • 1 ½ lbs brussel sprouts, trimmed and halved
  • 3 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)
  • 2 tbsp balsamic glaze (or ¼ cup balsamic vinegar reduced)
  • Red pepper flakes, for serving (optional)

Method
 

  1. Preheat the oven to 400°F (200°C). In a large bowl, toss the brussel sprouts with olive oil, salt, pepper, and garlic powder until evenly coated.
  2. Spread the sprouts cut-sides down on a large rimmed baking sheet in a single layer.
  3. Roast for 25 to 30 minutes, until the edges are deeply caramelized and crisp.
  4. Drizzle the hot sprouts with balsamic glaze, toss gently on the pan, and serve right away with red pepper flakes if you like.

Notes

If you’re using balsamic vinegar instead of a thick glaze, simmer it while the sprouts roast so it’s ready to pour. The sprouts will soften slightly as they cool, so they’re best straight from the oven.
