- Shave the trimmed Brussels sprouts as thinly as possible using a mandoline or sharp knife.
- Toast the sliced almonds in a dry skillet over medium heat for 3 to 4 minutes, shaking often, until golden and fragrant. Transfer to a plate immediately.
- Whisk the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until smooth.
- Toss the shaved sprouts with most of the dressing, then add the cranberries, half the almonds, and most of the Parmesan. Toss again, pile onto a platter, and top with the remaining almonds and Parmesan.
Notes
Let the dressed salad sit for 5 minutes so the sprouts soften slightly and the flavors meld. If you plan to keep leftovers, set aside a portion before adding the almonds and Parmesan so they stay crunchy for later.
