Ingredients
  

  • 1 medium head iceberg lettuce, chopped (about 8 cups)
  • 1 cup frozen peas, thawed and drained
  • ½ cup diced red onion
  • 1 cup diced celery
  • 4 large hard-boiled eggs, chopped
  • 10 slices bacon, cooked crisp and crumbled (about ½ cup)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 2 tablespoons granulated sugar
  • 2 tablespoons white vinegar
  • ¼ teaspoon salt, plus more to taste
  • Freshly ground black pepper

Method
 

  1. Whisk mayonnaise, sour cream, sugar, vinegar, salt, and pepper until smooth.
  2. In a large glass bowl, layer lettuce, peas, celery, red onion, and eggs.
  3. Spread the dressing evenly over the top, covering completely to the edges.
  4. Top with shredded cheese and crumbled bacon, cover, and chill at least 4 hours.
  5. Scoop down through all layers and serve cold.

Notes

Chill time is essential here, so plan for at least 4 hours in the fridge. You can cook the bacon and boil the eggs a day ahead to speed up assembly. The dressing keeps the lettuce crisp for a full day, making this salad ideal for make-ahead meal prep.
