Ingredients

  • 1 lb ground beef, 85/15
  • 1 (1-oz) packet taco seasoning
  • 1 (16-oz) can refried beans
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup shredded sharp cheddar cheese
  • 2 Roma tomatoes, diced
  • 1 (2.25-oz) can sliced black olives, drained
  • 2 tablespoons chopped green onions, for garnish (optional)

Method

  1. Brown the ground beef in a skillet over medium-high heat for 6-8 minutes, drain fat, stir in taco seasoning and 2 tablespoons water, and simmer 2 minutes. Let cool 10 minutes.
  2. Stir water into the refried beans if needed, then spread them evenly across the bottom of a 9x13-inch dish.
  3. Spoon the cooled beef over the beans and spread into an even layer.
  4. Mix sour cream with a pinch of salt and any remaining taco seasoning, then spread it over the beef.
  5. Dollop the guacamole over the sour cream and smooth it gently without mixing the layers.
  6. Top with shredded cheddar, diced tomatoes, drained olives, and green onions. Serve immediately with tortilla chips.

Notes

Let the beef cool until it’s just warm or room temperature before layering, otherwise the sour cream can slip. If you want to get ahead, assemble everything except the tomatoes and olives up to a day in advance, cover, and refrigerate. Add the fresh toppings right before serving.
